Preparation time: 20 mins    Cooking time: 15 mins    Serves: 4 Total cost: $9-$12 approx* (*depending on protein choice)  

Ingredients:   500gms chicken breast, diced (or bacon, tofu, pork, beef, egg)

2 Tbspn cooking oil 

3 cups cold, cooked long grain rice 

2 cups frozen mixed veges, or fresh seasonal diced veges

2 eggs, beaten lightly (optional) 

2 Tbspn soy sauce

Method:   Heat 1 Tbspn oil in large fry pan over medium heat. If using egg, cook egg in pan to make a thin omelette. When cooked remove from pan and cut into thin strips. Set aside.

Heat remaining oil to pan and add chicken. Cook for 7-8 minutes until cooked through. 

Add veges and cook for a further 5 minutes until soft. 

Add cooked rice (and cooked egg if using), soy sauce, and stir through until combined. Serve.

Tip
• Rice can be cooked ahead of time either on stove top or in microwave (see rice pack for instructions). Once cooked spread on a tray and allow to cool till ready to use.
