Picklets are a great Sunday brunch on a cold winters weekend. Super easy to do and you can either make them sweet or savoury depending on your taste buds.
Add bacon and lashes of tomato sauce if you are looking for savoury, or go for fresh fruit, jam or even cream for a special sweet treat.

Ingredients:
1 C self-raising flour (or plain flour plus 1 tspn baking powder)
1 Tbspn sugar
Pinch of salt
¾ C milk
1 egg
1 Tbspn oil or butter
Method:
Sift flour, sugar, and salt together in a bowl.
In a separate small bowl whisk milk and egg together.
Add the whisked milk and egg to the sieved dry ingredients and whisk gently until smooth.
Heat oil or butter in a large frying pan on a medium heat.
Once pan is heated, drop tablespoonfuls of the mixture into the pan and cook until bubbles appear on the top. Flip pikelets over and cook until golden.
Serving suggestions: plain, buttered, butter & jam, maple syrup, jam & cream
