Get creative with Burritos for a fun mix it up kinda dish for the whole flat

Preparation time: 5 mins    Cooking time: 15 mins       Serves: 4 

Total cost: $15.00 for chicken or lamb version or $10-$12 for beef version (approx.) 

Ingredients:  
2 Tbsp oil

400g chicken mince (or beef or lamb mince)

1 can baked beans

1 can four bean mix 

1 can Mexican style tomatoes   

Salad vegetables e.g., lettuce, tomato, red onion, corn, carrot

Wraps 1-2 per person

1 cup cheese, grated (or you can use ricotta, feta or something else to suit your tastebuds)

Method:  
Heat oil in large frying pan on medium heat. Add chicken mince and cook well. Add the canned baked beans, four bean mix and Mexican tomatoes (drain only the liquid from the four-bean mix can – the others can be added in full). Reduce heat and simmer while preparing salad. 

Prepare salad items individually on a board or platter making it easy for those eating to assemble their own burritos. Shred lettuce, diced tomatoes, drain canned corn, grate carrot, grate cheese, baby spinach leaves 

Warm wraps slightly in microwave. Serve by placing spoonfuls of mince/bean mix on wraps, top with salad and grated cheese. Add whatever sauce you prefer e.g., sour cream, sweet chilli, bbq.

Tip

• Using Mexican style canned tomatoes is a cost-effective way to add flavour to this dish rather than purchasing individual peppers/onions/spices.
