This is a great winter warmer. You can get seasonal winter veges cheap and your 5 plus a day with minimal effort.

Preparation time: 10 mins    Cooking time: 30 mins    Serves: 4 Total cost: $7-$13 approx* (*depending on protein choice. Vegetarian is cheapest, followed by tofu, chicken then bacon)

Ingredients:  

400gms bacon, diced (or chicken, or tofu)

Fresh or frozen vegetables, diced (we used broccoli, carrot, kumara, potato, courgette and red onion)

2-3 Tbspn cooking oil

Salt and pepper (try garlic & herb salt for extra flavour) 

Feta cheese and baby spinach leaves (optional)

Method:  

Preheat oven to 180c fan bake. 

Line 2 large baking trays or roasting pans with baking paper (or grease trays with a little oil) to prevent vegetables from sticking. Arrange selection of diced vegetables in the trays. Sprinkle with oil, salt and pepper. 

Place trays of vegetables into the oven and cook for approximately 30 minutes until veges are cooked through and slightly browned. Turn veges halfway to allow for even cooking. 

While vegetables are cooking in the oven pan fry the diced bacon until browned and set aside. 

Once veges are cooked, remove from oven, and add bacon onto them. For extra flavour add a handful of baby spinach and some diced feta cheese over the veges and bacon. 

Tip

• Make sure to have your oven on fan bake as this will help remove some of the moisture from the vegetables as they cook to prevent them from going mushy.
