Nachos are always a favorite and you can easily spice them up with extra chilli. Look for dried chilli powder or chilli flakes in the spices section at the supermarket and keep it handy for when you want to add some heat to the meal.

Preparation time: 5 mins    Cooking time: 10 mins    Serves: 4 Total cost: $7-$15 approx* 

(*depending on protein choice. Vegetarian is cheapest, followed by beef then chicken)

Ingredients:   400-500gms chicken mince (or beef mince)

2-3 Tbspn cooking oil

Mexican Style kidney beans x 1 can

Baked beans x 1 can

Four bean mix x 1 can 

Corn chips 1-2 bags

Cheese, grated (1 cup)

Sour cream (optional)

Spinach leaves (optional)

Method:  

Heat oil in a large frying pan. Add mince and fry for 5 minutes or until fully cooked through.

Add the 3 cans of beans stirring continually until heated through.

Arrange corn chips in bowls. Spoon mince & bean mixture over the corn chips. Add some spinach leaves if desired. Top with grated cheese and pop under the grill for 1-2 minutes until cheese is melted and golden. 

Tip

• For vegetarian nachos omit the mince and add extra spinach leaves.  

•You can use a variety of canned beans for this recipe, with the cheapest plain baked beans often retailing for .70c to .80c per can. The mexican beans are great as they save you having to buy extra seasonings to achieve the flavour.
