Preparation time: 5 mins     Cooking time: 15 mins       Serves: 4             Total cost: $12-$15 approx*  (*depending on protein choice)  

Ingredients:  

1-2 cups frozen mixed veges, or fresh diced veges e.g., broccoli 

2 Tbsp oil

400g diced pork (or bacon, chicken, beef, or tofu)

200g rice noodles  

2 Tbsp soy sauce 

2 Tbsp sweet chilli sauce

Method:   Cook frozen or fresh veges in boiling water until tender. Drain and set aside. 

Heat oil in frying pan. Add diced pork and cook until browned. 

While pork is cooking put rice noodles into a separate pot of boiling water and cook as per packet instructions. Drain noodles. 

Add cooked veges and noodles to the pork and reduce heat. Add soy sauce and sweet chilli, or other preferred sauce. Stir through gently to combine. Serve. 

Tip

• You can use a variety of noodles for this recipe. Even 2-minute noodles work well. We buy rice noodles from the ‘International’ section at the supermarket for $1.89 per packet. The bonus is that they are gluten free too.
